What Should I do with Green Tomatoes?

All summer, we were blessed with a production of tomatoes by our tiny pot garden. Finally, the days got colder and I was left with several pounds of green tomatoes.

I didn’t really know what to do with them, so I looked up a recipe online for….

Cooking the Salsa
It took a few hours to make the salsa. First to chop up the veggies, cook, and can them. Dennis helped me with the canning effort, as it goes much faster with two people.

Salsa & Canning Pot Finished Product
The salsa turned out to be very mild, in part due to the mild ingredients: green tomatoes, red onion, garlic, pimento, lime juice, and banana peppers. I also mixed in a few ripe tomatoes, just so it wouldn’t be too bitter.
